To say we love Barrel Aging is an understatement, and today we're introducing you to a project years in the making!
Ontogenesis represents our experimentation with how beer matures over oak during the barrel aging process through one incredible Barleywine. In late 2021 we brewed a simple yet bold barleywine and transferred the entire batch into freshly dumped New Riff Bourbon Barrels.
Checking in on beer aging on oak is one of the best perks of the job, and now we're bringing that experience to you! Every six months we will bottle and release one of these bourbon barrels filled with Ontogenesis so that we, as well as you, can see how this one beer will mature over the next two years.
This first release - "June 2022" - is Ontogenesis at 6 months in barrels and releases this Saturday at Barrel House!
